Indian Street Food (Chaat), Explained: A Beginner's Guide

If Indian food is new to you, chaat is the most fun place to start. Chaat is the umbrella name for India's vast world of savoury street snacks — the food you'd grab from a roadside stall, eaten standing up, bursting with contrast. So what is chaat, really, and what should you order first?

What makes chaat, chaat

The magic of chaat is the collision of textures and tastes in a single bite: crunchy fried bases, soft potato or chickpeas, cool yoghurt, tangy tamarind, fresh mint, and a hit of spice. Sweet, sour, salty, spicy and crisp — all at once. It's designed to wake up your whole palate.

Most chaat is vegetarian by nature, and much of it is vegan or easily made vegan.

The chaat to know (and order first)

  • Pani Puri — crisp hollow shells you fill with spiced mint water and pop whole. The classic first bite.
  • Bhel Puri — puffed rice tossed with chutneys, onion and crunchy sev. Light and moreish.
  • Sev Puri & Dahi Puri — flat or hollow puris loaded with potato, chutneys, and (for dahi) cooling yoghurt.
  • Vada Pav — Mumbai's legendary "Indian burger": a spiced potato fritter in a soft bun.
  • Pav Bhaji — a rich, spiced vegetable mash served with buttered bread rolls.
  • Aloo Tikki Chaat — a crisp potato patty topped with chickpeas, yoghurt and chutneys.

If it's your first time, start with Pani Puri, then a Vada Pav — between them you'll understand exactly why India loves its street food.

Is chaat spicy?

It can be, but it doesn't have to be. Chaat is more about balance than heat — the tamarind, yoghurt and mint keep even the spicier plates approachable. Tell your server your spice preference and they'll steer you right.
